We all know how much COVID-19 has affected our daily lives. The silver lining i've found during this time is, well, time...time to finally try and do new things. So like many I jumped on the sourdough making wagon. There is something so satisfying about being able to make your own bread. Its primitive in the nicest sense of that word, and in a weird way has grounded me and made me appreciate the little things in life more. During my sourdough journey I came across a great recipe to save the excess waste you get when feeding your sourdough starter. Its pancakes, and who doesnt love a warm, fluffy pancake?

What You'll Need:

* 2 cups all-purpose flour

* 2 teaspoons baking powder

* 1 teaspoon baking soda

* 2 tablespoons granulated sugar

* 1 teaspoon salt

* I cup sourdough starter

* 1 1/2 cups milk

* 1 large egg beaten

* 2 tablespoons vegetable oil

Instructions

In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.

Add the sourdough starter, milk, egg and oil. Mix well just until combined.

Spray pan with neutral oil or with butter

Pour 1/4 cup pancake batter on the hot pan.

Cook until the pancake starts bubbling on top, then flip the pancake.
